Description
This Cake Mix Gingerbread combines the ease of a boxed mix with the rich, deep flavors of traditional molasses and buttermilk. It results in a moist, tender crumb that serves as the perfect foundation for holiday festivities and warm family memories.
Ingredients
- 1 package Spice Cake Mix
- 1/2 cup All-Purpose Flour
- 1/2 cup Brown Sugar
- 1 tsp ground Ginger
- 1 tsp ground Cinnamon
- 1/2 tsp ground Nutmeg
- 1 cup Sour Cream
- 1/2 cup Buttermilk
- 3 Large Eggs (room temperature)
- 1/2 cup Molasses
Instructions
- Preheat your oven to 350°F (175°C) and thoroughly grease a 9×13-inch baking pan with butter or non-stick spray.
- In a large mixing bowl, whisk together the spice cake mix, all-purpose flour, brown sugar, ginger, cinnamon, and nutmeg until well combined and free of lumps.
- In a separate small bowl, whisk together the room-temperature eggs and buttermilk until smooth.
- Add the egg mixture, sour cream, and molasses to the dry ingredients in the large bowl.
- Gently stir the batter by hand using a spatula or wooden spoon until just smooth, being careful not to overwork the gluten.
- Pour the batter into the prepared pan and bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
- Place the pan on a wire rack and allow the cake to cool completely before adding frosting or powdered sugar.
Notes
To ensure a perfectly smooth batter, allow your eggs and dairy to reach room temperature before mixing. If you prefer a more intense ginger profile, consider adding a tablespoon of freshly grated ginger to the dry mix. This cake’s flavor actually improves if made a day ahead, allowing the aromatic spices to fully develop within the moist crumb.
